4 small zucchini or 1 large1 14oz can diced, Italian stewed tomatoes
1/2 onion
2-3 cloves of garlic
1 tbsp. olive oil
1/2- 1 cup Parmesan cheese, shredded
Slice zucchini into bite size pieces. Dice onion and garlic. Saute onion and garlic in a pan over medium heat in olive oil. Add in zucchini and saute until slightly tender. Add in tomatoes and continue cooking until zucchini is completely tender. Top with Parmesan cheese and serve.
