Pulled Pork Sandwiches

1-2 pork picnic roasts (approx 2 lbs will make plenty of leftovers)
Sweet Baby Ray's BBQ Sauce
1 bag of coleslaw
Coleslaw dressing (or make up your own)
Whole grain buns
Salt & Pepper to taste

Salt & pepper you pork roasts and cook in a crockpot until it easily flakes apart. I usually start mine at noon and cook on high until 3 or 4pm and then turn down to low until dinner. Just before serving mix in heated up BBQ sauce until meat is coated well. Toast your buns and serve with coleslaw on the sandwich.

Barbecue Roast Beef sandwich

1 roast beef
1/3 cup of brown sugar
1/2 a bottle of honey barbecue sauce

Place all ingredients in the crock pot and place on low for 5 to 6 hrs.
When done serve on any style of bread.

slow cooker chicken tacos



*This is probably Ryan's favorite meal of all and it is so simple and easy. Lots of times, I don't have everything on hand so I just use salsa alone with the chicken and it turns out just as good.

Ingredients:
2-3 boneless skinless chicken breasts
1 jar of your favorite salsa (I use yellow tomatillo from Trader Joe's)
1 can diced green chiles
1 tsp ground cumin
1 onion chopped
2 cloves garlic, minced

Directions:
1. Place Chicken in bottom or crock pot, add all other ingredients. Cover and set on low for 8 hours
or high 4-6 hours.
2. Remove chicken from pot, shred with two forks and return to juices
3. Spoon chicken into taco shells and add desired toppings.

We always use the left overs for nachos and/or taco salad.
